Ingredients

  • Chicken thighs, boneless - 400 grams
  • Rice flour - 50 grams
  • Cornstarch - 30 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Fish sauce - 2 tablespoons
  • Egg - 1 large
  • Vegetable oil - for frying

Steps

  1. In a bowl, mix rice flour, cornstarch, garlic powder, onion powder, black pepper, salt, and turmeric powder to create the coating mixture.
  2. In another bowl, marinate the chicken thighs with fish sauce and let them sit for 15 minutes.
  3. After marinating, dip each chicken thigh into the egg, allowing excess to drip off.
  4. Coat the chicken in the flour mixture, ensuring an even coating on all sides.
  5. Heat vegetable oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F).
  6. Carefully place the coated chicken thighs into the hot oil, frying for about 8-10 minutes on each side or until golden brown and crispy.
  7. Once cooked, remove the chicken and place it on paper towels to drain excess oil.
  8. Serve hot with fresh herbs and dipping sauce of choice.
