- Chicken thighs - 400 grams, boneless and skinless
- Almond flour - 100 grams
- Coconut flour - 50 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1 large, beaten
- Coconut oil - 200 ml for frying
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Cut the chicken thighs into bite-sized pieces and set aside.
- In a bowl, mix the almond flour, coconut flour, garlic powder, onion powder, salt, and black pepper to create the coating mixture.
- In another bowl, beat the egg until well mixed.
- Dip each piece of chicken into the beaten egg, allowing excess to drip off, then coat thoroughly with the flour mixture.
- Heat coconut oil in a large skillet over medium-high heat until hot.
- Fry the coated chicken pieces in batches, cooking for about 5-7 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
- Garnish with chopped fresh cilantro before serving.
