Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Almond flour - 100 grams
  • Coconut flour - 50 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large, beaten
  • Coconut oil - 200 ml for frying
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Cut the chicken thighs into bite-sized pieces and set aside.
  2. In a bowl, mix the almond flour, coconut flour, garlic powder, onion powder, salt, and black pepper to create the coating mixture.
  3. In another bowl, beat the egg until well mixed.
  4. Dip each piece of chicken into the beaten egg, allowing excess to drip off, then coat thoroughly with the flour mixture.
  5. Heat coconut oil in a large skillet over medium-high heat until hot.
  6. Fry the coated chicken pieces in batches, cooking for about 5-7 minutes on each side, or until golden brown and cooked through.
  7. Remove the chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
  8. Garnish with chopped fresh cilantro before serving.
