  • Lemongrass - 1 stalk, finely chopped
  • Coconut oil - 100 ml, for frying
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro - a handful, for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a mixing bowl, combine coconut flour, tapioca starch, salt, black pepper, and turmeric powder.
  2. Add minced garlic and chopped lemongrass to the dry mixture, mixing well.
  3. Cut the chicken thighs into bite-sized pieces and coat them evenly with the flour mixture.
  4. Heat coconut oil in a deep skillet over medium heat until hot.
  5. Fry the coated chicken pieces in batches, ensuring they are not overcrowded, for about 6-8 minutes until golden brown and crispy.
  6. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.
  7. Serve hot, garnished with fresh cilantro and lime wedges on the side.
