Steps
- In a mixing bowl, combine coconut flour, tapioca starch, salt, black pepper, and turmeric powder.
- Add minced garlic and chopped lemongrass to the dry mixture, mixing well.
- Cut the chicken thighs into bite-sized pieces and coat them evenly with the flour mixture.
- Heat coconut oil in a deep skillet over medium heat until hot.
- Fry the coated chicken pieces in batches, ensuring they are not overcrowded, for about 6-8 minutes until golden brown and crispy.
