- Garlic - 4 cloves, minced
- Shallots - 2, finely chopped
- Fish sauce - 3 tablespoons
- Soy sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- In a bowl, combine minced garlic, chopped shallots, black pepper, fish sauce, soy sauce, brown sugar, and vegetable oil to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and allow excess marinade to drip off.
- Grill the chicken for 6-8 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for 5 minutes before slicing.
- Serve garnished with fresh cilantro and lime wedges on the side.
