Ingredients

  • Chicken thighs - 400 grams
  • Black pepper - 2 teaspoons
  • Garlic - 4 cloves, minced
  • Shallots - 2, finely chopped
  • Fish sauce - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a bowl, combine minced garlic, chopped shallots, black pepper, fish sauce, soy sauce, brown sugar, and vegetable oil to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and allow excess marinade to drip off.
  4. Grill the chicken for 6-8 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is cooked through and has nice grill marks.
  5. Remove from the grill and let rest for 5 minutes before slicing.
  6. Serve garnished with fresh cilantro and lime wedges on the side.
