  • Hoisin sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Lemongrass - 1 stalk, finely chopped
  • Black pepper - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine soy sauce, hoisin sauce, fish sauce, brown sugar, minced garlic, chopped lemongrass, black pepper, and sesame oil to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting excess marinade drip off.
  4. Grill the chicken for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 75°C (165°F).
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
