- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Black pepper - 1 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- In a mixing bowl, combine minced garlic, chopped chili, fish sauce, soy sauce, lime juice, olive oil, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes to allow the flavors to penetrate.
- Preheat your grill or grill pan over medium heat.
- Remove the chicken from the marinade and discard any remaining marinade.
- Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is cooked through.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
