  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine minced garlic, chopped chili, fish sauce, soy sauce, lime juice, olive oil, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes to allow the flavors to penetrate.
  3. Preheat your grill or grill pan over medium heat.
  4. Remove the chicken from the marinade and discard any remaining marinade.
  5. Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is cooked through.
