- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
Steps
- In a bowl, combine the chopped chili peppers, minced garlic, fish sauce, lime juice, coconut sugar, black pepper, and vegetable oil to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.
- Preheat your grill or grill pan to medium-high heat.
- Remove the chicken from the marinade and season with salt to taste.
- Place the chicken thighs skin-side down on the grill. Cook for 5-7 minutes until the skin is crispy and golden.
- Flip the chicken and reduce the heat to medium. Cook for an additional 15-20 minutes, or until the internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with chopped cilantro before serving.
