Ingredients

  • Chicken thighs - 400g, skin-on, bone-in
  • Fresh red chili peppers - 2 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Coconut sugar - 1 teaspoon (optional for sweetness)
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste

Steps

  1. In a bowl, combine the chopped chili peppers, minced garlic, fish sauce, lime juice, coconut sugar, black pepper, and vegetable oil to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Remove the chicken from the marinade and season with salt to taste.
  5. Place the chicken thighs skin-side down on the grill. Cook for 5-7 minutes until the skin is crispy and golden.
  6. Flip the chicken and reduce the heat to medium. Cook for an additional 15-20 minutes, or until the internal temperature reaches 75°C (165°F).
  7. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  8. Garnish with chopped cilantro before serving.
