Steps
- In a mixing bowl, combine minced lemongrass, garlic, bird's eye chilies, fish sauce, soy sauce, olive oil, lime juice, black pepper, and salt to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated, and let marinate for at least 30 minutes (or up to 2 hours for more flavor).
