- Black pepper - 1 teaspoon

- Lime - 1, juiced
- Fresh coriander - for garnish
Steps
- In a mixing bowl, combine minced lemongrass, garlic, shallots, fish sauce, soy sauce, olive oil, black pepper, chili powder (if using), and lime juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and let the excess drip off. Discard any leftover marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until they are cooked through and have nice grill marks.
