  • Lime - 1, juiced
  • Fresh coriander - for garnish

Steps

  1. In a mixing bowl, combine minced lemongrass, garlic, shallots, fish sauce, soy sauce, olive oil, black pepper, chili powder (if using), and lime juice to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and let the excess drip off. Discard any leftover marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until they are cooked through and have nice grill marks.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
