- Brown sugar substitute (erythritol or stevia) - 1 tablespoon
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Black pepper - 1 teaspoon, freshly ground
- Cilantro - 2 tablespoons, chopped (for garnish)
- Green onions - 2, chopped (for garnish)
- Cooking oil - 1 tablespoon, for grilling
Steps
- In a mixing bowl, combine fish sauce, soy sauce, lime juice, brown sugar substitute, minced garlic, chopped shallots, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or grill pan over medium-high heat and lightly oil the grates.
- Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.
