  • Brown sugar substitute (erythritol or stevia) - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Black pepper - 1 teaspoon, freshly ground
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Green onions - 2, chopped (for garnish)
  • Cooking oil - 1 tablespoon, for grilling

Steps

  1. In a mixing bowl, combine fish sauce, soy sauce, lime juice, brown sugar substitute, minced garlic, chopped shallots, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat and lightly oil the grates.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
  5. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.
