  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Lettuce leaves - 4 large leaves for serving

Steps

  1. In a mixing bowl, combine fish sauce, minced garlic, chopped shallots, black pepper, brown erythritol, and lime juice to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated, and let them marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until the chicken is cooked through and has a nice char.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
