Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Kaffir lime leaves - 10 leaves, finely sliced
  • Garlic - 3 cloves, minced
  • Shallots - 2, minced
  • Fish sauce - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Honey - 1 teaspoon (optional for sweetness)
  • Black pepper - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine the minced garlic, shallots, fish sauce, coconut aminos, honey, black pepper, and olive oil to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Remove the chicken from the marinade and lay it on the grill. Grill for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 75°C (165°F) and has nice grill marks.
  5. During the last few minutes of grilling, sprinkle the finely sliced kaffir lime leaves over the chicken for added flavor.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
