Ingredients

  • Chicken thighs - 300 grams
  • Chao (fermented soybean paste) - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lime juice - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Honey - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - 1 tablespoon, chopped (for garnish)
  • Olive oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the chao, minced garlic, lime juice, coconut aminos, honey, and black pepper to create the marinade.
  2. Add the chicken thighs to the bowl, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat your grill or a grill pan over medium-high heat and brush it lightly with olive oil.
  4. Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-8 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  6. Slice the chicken and serve hot, garnished with fresh chopped coriander.
