  • Olive oil - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix together the lime juice, lime zest, minced garlic, chopped red chili, fish sauce, olive oil, black pepper, and salt to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade, letting excess marinade drip off, and place on the grill.
  5. Grill the chicken for about 5-7 minutes on each side or until fully cooked through and the internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  7. Slice the chicken and garnish with fresh cilantro before serving.
