- Chicken thighs - 400 grams, boneless and skinless
- Fresh lime juice - 3 tablespoons
- Lime zest - 1 teaspoon
- Garlic - 3 cloves, minced
- Fish sauce - 1 tablespoon
- Coconut aminos - 1 tablespoon
- Honey - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
Steps
- In a bowl, combine lime juice, lime zest, minced garlic, fish sauce, coconut aminos, honey, black pepper, and salt to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
- Preheat your grill or grill pan to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Brush lightly with olive oil.
- Grill the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 75°C (165°F) and have nice grill marks.
- Once cooked, remove from the grill and let rest for 5 minutes.
- Slice the chicken and garnish with chopped fresh cilantro before serving.
