Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Fresh lime juice - 3 tablespoons
  • Lime zest - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Fish sauce - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Honey - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon

Steps

  1. In a bowl, combine lime juice, lime zest, minced garlic, fish sauce, coconut aminos, honey, black pepper, and salt to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Brush lightly with olive oil.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 75°C (165°F) and have nice grill marks.
  6. Once cooked, remove from the grill and let rest for 5 minutes.
  7. Slice the chicken and garnish with chopped fresh cilantro before serving.
