  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - 20 grams, chopped
  • Mint leaves - 20 grams
  • Cucumber - 1/2, sliced
  • Chili sauce - 1 tablespoon (optional)
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix minced garlic, chopped lemongrass, fish sauce, brown sugar, lime juice, olive oil, salt, and pepper to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it is well coated. Cover and let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until cooked through and juices run clear.
  5. While the chicken is grilling, toast the gluten-free buns on the grill for 1-2 minutes until lightly golden.
  6. Once cooked, let the chicken rest for a few minutes, then slice it into strips.
  7. Assemble the burgers by placing grilled chicken on the bottom half of each bun, topping with sliced cucumber, chopped cilantro, mint leaves, and chili sauce if using.
  8. Place the top half of the bun on each burger and serve immediately.
