- Lime juice - 1 tablespoon
- Cilantro - 20 grams, chopped
- Mint leaves - 20 grams
- Cucumber - 1/2, sliced
- Chili sauce - 1 tablespoon (optional)
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, mix minced garlic, chopped lemongrass, fish sauce, brown sugar, lime juice, olive oil, salt, and pepper to create a marinade.
- Add the chicken breast to the marinade, ensuring it is well coated. Cover and let it marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until cooked through and juices run clear.
- While the chicken is grilling, toast the gluten-free buns on the grill for 1-2 minutes until lightly golden.
- Once cooked, let the chicken rest for a few minutes, then slice it into strips.
- Assemble the burgers by placing grilled chicken on the bottom half of each bun, topping with sliced cucumber, chopped cilantro, mint leaves, and chili sauce if using.
- Place the top half of the bun on each burger and serve immediately.
