- Lager beer - 120 ml
- Garlic - 4 cloves, minced
- Shallots - 2, finely chopped
- Fresh lemongrass - 1 stalk, minced
- Fish sauce - 2 tablespoons
- Honey - 1 tablespoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Coconut oil - 1 tablespoon
Steps
- In a mixing bowl, combine the minced garlic, shallots, lemongrass, fish sauce, honey, black pepper, and salt to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated, and then pour in the lager beer. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Preheat your grill or grill pan over medium-high heat and brush it with coconut oil to prevent sticking.
- Remove the chicken from the marinade and allow any excess to drip off. Reserve the marinade for basting.
- Grill the chicken thighs for about 6-7 minutes per side, basting with the reserved marinade occasionally, until fully cooked and a nice char is formed.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
