Ingredients

  • Chicken thighs - 400 grams
  • Lager beer - 120 ml
  • Garlic - 4 cloves, minced
  • Shallots - 2, finely chopped
  • Fresh lemongrass - 1 stalk, minced
  • Fish sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Coconut oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the minced garlic, shallots, lemongrass, fish sauce, honey, black pepper, and salt to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated, and then pour in the lager beer. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Preheat your grill or grill pan over medium-high heat and brush it with coconut oil to prevent sticking.
  4. Remove the chicken from the marinade and allow any excess to drip off. Reserve the marinade for basting.
  5. Grill the chicken thighs for about 6-7 minutes per side, basting with the reserved marinade occasionally, until fully cooked and a nice char is formed.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
