Ingredients

  • Firm tofu - 200 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1/2, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 30 grams, chopped
  • Roasted peanuts - 30 grams, crushed
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili flakes - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. Heat the sesame oil in a non-stick pan over medium heat and fry the tofu cubes until golden brown on all sides, about 10 minutes.
  3. In a large bowl, combine the julienned cucumber, carrot, red bell pepper, chopped cilantro, and mint.
  4. In a small bowl, whisk together the lime juice, soy sauce, maple syrup, minced garlic, and chili flakes to create the dressing.
  5. Once the tofu is cooked, let it cool slightly, then add it to the vegetable mixture.
  6. Pour the dressing over the salad and gently toss to combine all ingredients.
  7. Top with crushed roasted peanuts and season with salt to taste before serving.
