Ingredients

  • Cabbage - 100 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Red bell pepper - 50 grams, thinly sliced
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Cooked chicken breast - 100 grams, shredded
  • Roasted peanuts - 20 grams, crushed
  • Lime juice - 2 tablespoons
  • Fish sauce (Halal) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely sliced (optional)

Steps

  1. In a large mixing bowl, combine the sliced cabbage, julienned carrot, cucumber, and red bell pepper.
  2. Add the shredded cooked chicken, chopped mint, and cilantro to the bowl.
  3. In a small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chili (if using) until the sugar is dissolved.
  4. Pour the dressing over the salad mixture and toss gently to combine all the ingredients well.
  5. Let the salad sit for about 5 minutes to allow the flavors to meld.
  6. Before serving, sprinkle the crushed roasted peanuts on top for added crunch.
