- Cooked chicken breast - 100 grams, shredded
- Roasted peanuts - 20 grams, crushed
- Lime juice - 2 tablespoons
- Fish sauce (Halal) - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, finely sliced (optional)
Steps
- In a large mixing bowl, combine the sliced cabbage, julienned carrot, cucumber, and red bell pepper.
- Add the shredded cooked chicken, chopped mint, and cilantro to the bowl.
- In a small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chili (if using) until the sugar is dissolved.
- Pour the dressing over the salad mixture and toss gently to combine all the ingredients well.
- Let the salad sit for about 5 minutes to allow the flavors to meld.
