Ingredients

  • Pork loin - 200 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lettuce leaves - 4 large, for serving
  • Rice vinegar - 2 tablespoons
  • Fish sauce - 1 tablespoon (Halal-certified)
  • Sugar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, thinly sliced (optional)
  • Ground black pepper - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. Bring a pot of water to a boil and add the pork loin. Cook for about 15 minutes or until fully cooked. Remove and let it cool before slicing thinly.
  2. In a bowl, mix rice vinegar, fish sauce, sugar, minced garlic, ground black pepper, and sesame oil to create the dressing. Stir until the sugar dissolves.
  3. In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, chopped mint, and cilantro. Add the sliced pork and pour the dressing over the salad.
  4. Toss everything gently to combine all the ingredients well. Adjust seasoning with more fish sauce or sugar if needed.
  5. Serve the salad on a bed of lettuce leaves, garnishing with sliced chili pepper if desired.
