Ingredients

  • Rice vermicelli - 100 grams
  • Cabbage, finely shredded - 100 grams
  • Carrot, julienned - 50 grams
  • Cucumber, julienned - 50 grams
  • Red bell pepper, thinly sliced - 50 grams
  • Fresh cilantro leaves - 20 grams
  • Mint leaves - 20 grams
  • Cooked shrimp, peeled and deveined - 100 grams
  • Tofu, firm, cubed and pan-fried - 100 grams
  • Roasted peanuts, crushed - 30 grams
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sugar - 10 grams
  • Chili, sliced (optional) - 1 small

Steps

  1. Cook the rice vermicelli according to package instructions, then rinse under cold water and drain well.
  2. In a large bowl, combine the shredded cabbage, julienned carrot, cucumber, and red bell pepper.
  3. Add the cooked vermicelli, shrimp, and fried tofu to the bowl of vegetables.
  4. In a small bowl, whisk together lime juice, fish sauce, and sugar until the sugar is dissolved.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients.
  6. Add the fresh cilantro, mint leaves, and crushed peanuts, tossing lightly to incorporate.
  7. If desired, add sliced chili for heat and toss again.
  8. Serve immediately on plates or in bowls, garnished with additional herbs and peanuts.
