- Rice vermicelli - 100 grams
- Cabbage, finely shredded - 100 grams
- Carrot, julienned - 50 grams
- Cucumber, julienned - 50 grams
- Red bell pepper, thinly sliced - 50 grams
- Fresh cilantro leaves - 20 grams
- Mint leaves - 20 grams
- Cooked shrimp, peeled and deveined - 100 grams
- Tofu, firm, cubed and pan-fried - 100 grams
- Roasted peanuts, crushed - 30 grams
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Sugar - 10 grams
- Chili, sliced (optional) - 1 small
Steps
- Cook the rice vermicelli according to package instructions, then rinse under cold water and drain well.
- In a large bowl, combine the shredded cabbage, julienned carrot, cucumber, and red bell pepper.
- Add the cooked vermicelli, shrimp, and fried tofu to the bowl of vegetables.
- In a small bowl, whisk together lime juice, fish sauce, and sugar until the sugar is dissolved.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Add the fresh cilantro, mint leaves, and crushed peanuts, tossing lightly to incorporate.
- If desired, add sliced chili for heat and toss again.
- Serve immediately on plates or in bowls, garnished with additional herbs and peanuts.
