- Fresh mint leaves - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Maple syrup - 1 tablespoon
- Sesame oil - 1 teaspoon
- Chili flakes - 1/2 teaspoon
- Roasted peanuts - 30 grams, crushed

Steps
- Soak the dried tofu skin in warm water for about 20 minutes until softened. Drain and cut into strips.
- In a large bowl, combine the julienned carrot, cucumber, red bell pepper, chopped mint, and cilantro.
- In a separate small bowl, whisk together lime juice, soy sauce, maple syrup, sesame oil, and chili flakes to create the dressing.
