Ingredients
- Firm tofu - 200 grams
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Red bell pepper - 1 medium, julienned
- Fresh mint leaves - 20 grams
- Fresh cilantro - 20 grams
- Fresh lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Coconut aminos - 1 tablespoon
- Garlic - 1 clove, minced
- Red chili - 1 small, sliced (optional)
- Sesame oil - 1 teaspoon
- Crispy fried shallots - 20 grams (optional for garnish)
Steps
- Press the tofu for 15-20 minutes to remove excess moisture, then cut it into 1 cm cubes.
- In a non-stick skillet, heat sesame oil over medium heat and add the tofu cubes. Cook until golden brown on all sides, about 10-12 minutes. Remove from heat and let cool.
- In a large mixing bowl, combine the julienned carrot, cucumber, and red bell pepper.
- Add the cooked tofu, fresh mint, and cilantro to the bowl with the vegetables.
- In a small bowl, whisk together lime juice, fish sauce, coconut aminos, minced garlic, and sliced chili (if using). Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for 5 minutes to allow the flavors to meld, then serve garnished with crispy fried shallots if desired.
