Ingredients
- Dried shrimp - 100 grams
- Lettuce (shredded) - 100 grams
- Carrot (julienned) - 50 grams
- Cucumber (thinly sliced) - 50 grams
- Fresh herbs (mint, cilantro, basil) - 30 grams
- Roasted peanuts (crushed) - 30 grams
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Sugar - 5 grams
- Chili (sliced) - 1 small
- Garlic (minced) - 1 clove
- Sesame oil - 5 ml
Steps
- Soak the dried shrimp in warm water for 10 minutes to rehydrate, then drain and pat dry.
- In a small pan over medium heat, add sesame oil and sauté the minced garlic until fragrant.
- Add the rehydrated shrimp to the pan and stir-fry for about 3-4 minutes until they are slightly crispy. Remove from heat and let cool.
- In a large bowl, combine the shredded lettuce, julienned carrot, sliced cucumber, and fresh herbs.
- In a separate bowl, whisk together lime juice, fish sauce, sugar, and sliced chili to make the dressing.
- Add the sautéed shrimp to the salad mixture and pour the dressing over it, tossing well to combine.
- Serve the salad in bowls, topped with crushed roasted peanuts.
