Ingredients

  • Dried shrimp - 100 grams
  • Lettuce (shredded) - 100 grams
  • Carrot (julienned) - 50 grams
  • Cucumber (thinly sliced) - 50 grams
  • Fresh herbs (mint, cilantro, basil) - 30 grams
  • Roasted peanuts (crushed) - 30 grams
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sugar - 5 grams
  • Chili (sliced) - 1 small
  • Garlic (minced) - 1 clove
  • Sesame oil - 5 ml

Steps

  1. Soak the dried shrimp in warm water for 10 minutes to rehydrate, then drain and pat dry.
  2. In a small pan over medium heat, add sesame oil and sauté the minced garlic until fragrant.
  3. Add the rehydrated shrimp to the pan and stir-fry for about 3-4 minutes until they are slightly crispy. Remove from heat and let cool.
  4. In a large bowl, combine the shredded lettuce, julienned carrot, sliced cucumber, and fresh herbs.
  5. In a separate bowl, whisk together lime juice, fish sauce, sugar, and sliced chili to make the dressing.
  6. Add the sautéed shrimp to the salad mixture and pour the dressing over it, tossing well to combine.
  7. Serve the salad in bowls, topped with crushed roasted peanuts.
