Ingredients

  • Mint leaves - 20 grams, chopped
  • Red chili - 1 small, thinly sliced
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Peanut - 30 grams, crushed (for garnish)
  • Lettuce leaves - 4 large, for serving

Steps

  1. In a pot of boiling water, cook the peeled and deveined shrimp for about 3-4 minutes until they turn pink and opaque. Drain and let them cool.
  2. In a mixing bowl, combine the julienned green mango, chopped cilantro, chopped mint leaves, and sliced red chili.
  3. In a small bowl, whisk together the lime juice, fish sauce, and sugar until the sugar dissolves.
  4. Add the cooked shrimp to the mixing bowl with the mango and herbs, then pour the dressing over the top. Toss gently to combine all the ingredients.
  5. Serve the salad on a bed of lettuce leaves and sprinkle with crushed peanuts for garnish.
