- Rice vermicelli noodles - 50 grams
- Lettuce leaves (shredded) - 100 grams
- Carrot (julienned) - 1 medium
- Cucumber (julienned) - 1 small
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Chili pepper (sliced, optional) - 1 small
- Fish sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic (minced) - 1 clove
- Peanuts (crushed) - 20 grams
Steps
- In a pot of boiling water, cook the rice vermicelli noodles according to package instructions, then drain and rinse with cold water. Set aside.
- In a separate pot, bring water to a boil and add the pork slices. Cook for 8-10 minutes until fully cooked. Remove and let cool before slicing into thin strips.
- In the same pot, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove, rinse under cold water, and set aside.
- In a mixing bowl, combine the fish sauce, lime juice, sugar, and minced garlic to create the dressing. Stir until the sugar is dissolved.
- In a large bowl, combine the lettuce, carrot, cucumber, mint, cilantro, and sliced chili pepper (if using). Add the cooked vermicelli, sliced pork, and shrimp.
- Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
- Serve in individual bowls and top with crushed peanuts for added crunch.
