Ingredients

  • Shrimp (peeled and deveined) - 150 grams
  • Pork loin (thinly sliced) - 100 grams
  • Rice vermicelli noodles - 50 grams
  • Lettuce leaves (shredded) - 100 grams
  • Carrot (julienned) - 1 medium
  • Cucumber (julienned) - 1 small
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Chili pepper (sliced, optional) - 1 small
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Peanuts (crushed) - 20 grams

Steps

  1. In a pot of boiling water, cook the rice vermicelli noodles according to package instructions, then drain and rinse with cold water. Set aside.
  2. In a separate pot, bring water to a boil and add the pork slices. Cook for 8-10 minutes until fully cooked. Remove and let cool before slicing into thin strips.
  3. In the same pot, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove, rinse under cold water, and set aside.
  4. In a mixing bowl, combine the fish sauce, lime juice, sugar, and minced garlic to create the dressing. Stir until the sugar is dissolved.
  5. In a large bowl, combine the lettuce, carrot, cucumber, mint, cilantro, and sliced chili pepper (if using). Add the cooked vermicelli, sliced pork, and shrimp.
  6. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  7. Serve in individual bowls and top with crushed peanuts for added crunch.
