Ingredients

  • Fresh shrimp - 150 grams
  • Pork loin - 100 grams
  • Rice vermicelli noodles - 50 grams
  • Lettuce leaves - 4 large leaves
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Peanuts - 20 grams, crushed
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely chopped (optional)

Steps

  1. Start by boiling a pot of water. Add the pork loin and cook for about 15 minutes or until fully cooked. Remove and let cool, then slice thinly.
  2. In the same pot, add the shrimp and cook for about 3-4 minutes until they turn pink. Remove and let cool, then peel and devein.
  3. Prepare the rice vermicelli noodles according to package instructions, then rinse under cold water and drain.
  4. In a large bowl, combine the fish sauce, lime juice, sugar, minced garlic, and chopped chili pepper (if using). Stir well to create the dressing.
  5. In a serving platter, arrange the lettuce leaves as a bed. Layer the cooked vermicelli noodles on top, followed by the sliced pork, shrimp, carrots, cucumber, mint, and cilantro.
  6. Drizzle the dressing over the salad and toss gently to combine all ingredients.
  7. Sprinkle the crushed peanuts on top before serving.
