- Fresh shrimp - 150 grams
- Pork loin - 100 grams
- Rice vermicelli noodles - 50 grams
- Lettuce leaves - 4 large leaves
- Carrot - 1 medium, julienned
- Cucumber - 1 small, julienned
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Peanuts - 20 grams, crushed
- Fish sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, finely chopped (optional)
Steps
- Start by boiling a pot of water. Add the pork loin and cook for about 15 minutes or until fully cooked. Remove and let cool, then slice thinly.
- In the same pot, add the shrimp and cook for about 3-4 minutes until they turn pink. Remove and let cool, then peel and devein.
- Prepare the rice vermicelli noodles according to package instructions, then rinse under cold water and drain.
- In a large bowl, combine the fish sauce, lime juice, sugar, minced garlic, and chopped chili pepper (if using). Stir well to create the dressing.
- In a serving platter, arrange the lettuce leaves as a bed. Layer the cooked vermicelli noodles on top, followed by the sliced pork, shrimp, carrots, cucumber, mint, and cilantro.
- Drizzle the dressing over the salad and toss gently to combine all ingredients.
- Sprinkle the crushed peanuts on top before serving.
