- Rice vermicelli noodles - 100 grams
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Red bell pepper - 1 small, julienned
- Fresh mint leaves - 15 grams
- Fresh cilantro - 15 grams
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Sugar - 5 grams
- Garlic - 1 clove, minced
- Chili pepper - 1 small, finely sliced (optional)
- Roasted peanuts - 20 grams, crushed
Steps
- In a pot of boiling water, cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
- In a separate pot, bring water to a boil, add the shrimp, and cook for about 3-4 minutes or until they turn pink and opaque. Drain and cool under cold running water.
- In a large bowl, combine the cooled vermicelli noodles, shrimp, julienned carrot, cucumber, and red bell pepper.
- In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper (if using).
- Pour the dressing over the salad mixture and toss gently to combine.
- Add the fresh mint and cilantro leaves, and toss again to incorporate.
- Serve the salad in bowls, garnished with crushed roasted peanuts on top.
