Ingredients

  • Fresh shrimp - 200 grams, peeled and deveined
  • Rice vermicelli noodles - 100 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 small, julienned
  • Fresh mint leaves - 15 grams
  • Fresh cilantro - 15 grams
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sugar - 5 grams
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely sliced (optional)
  • Roasted peanuts - 20 grams, crushed

Steps

  1. In a pot of boiling water, cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
  2. In a separate pot, bring water to a boil, add the shrimp, and cook for about 3-4 minutes or until they turn pink and opaque. Drain and cool under cold running water.
  3. In a large bowl, combine the cooled vermicelli noodles, shrimp, julienned carrot, cucumber, and red bell pepper.
  4. In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper (if using).
  5. Pour the dressing over the salad mixture and toss gently to combine.
  6. Add the fresh mint and cilantro leaves, and toss again to incorporate.
  7. Serve the salad in bowls, garnished with crushed roasted peanuts on top.
