- Red bell pepper - 1, thinly sliced
- Fresh mint leaves - 20 grams
- Fresh cilantro - 20 grams
- Lettuce leaves - 4 large, for serving
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons (ensure kosher)
- Lime juice - 2 tablespoons
- Honey - 1 tablespoon (or agave syrup for vegan)
- Sesame oil - 1 tablespoon

Steps
- In a bowl, marinate the shrimp with minced garlic, soy sauce, lime juice, honey, sesame oil, salt, and pepper for at least 15 minutes.
- While the shrimp is marinating, cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
- Preheat a grill or grill pan over medium-high heat and grill the marinated shrimp for about 3-4 minutes on each side until fully cooked and slightly charred.
- In a large bowl, combine the cooked vermicelli noodles, cucumber, carrot, red bell pepper, mint, and cilantro.
- Toss the salad with additional lime juice and seasoning if desired.
- To serve, place a large lettuce leaf on a plate, add a portion of the noodle salad, and top with grilled shrimp.
