- Shrimp - 200 grams, peeled and deveined
- Mixed mushrooms (shiitake, enoki) - 100 grams, sliced
- Rice vermicelli noodles - 50 grams, dry
- Lettuce leaves - 4 large, washed and torn
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Fresh cilantro - 20 grams, chopped
- Fresh mint - 10 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Red chili - 1 small, sliced (optional)
- Roasted peanuts - 30 grams, crushed (for garnish)
Steps
- In a pot of boiling salted water, cook the rice vermicelli noodles for about 3-4 minutes until tender. Drain and rinse under cold water to stop the cooking process.
- In a skillet, heat a little oil over medium heat and sauté the minced garlic until fragrant. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat and let cool.
- In the same skillet, add the sliced mushrooms and cook until tender, about 4-5 minutes. Remove from heat and let cool.
- In a large bowl, combine the cooked shrimp, sautéed mushrooms, rice vermicelli, julienned cucumber, julienned carrot, chopped cilantro, and chopped mint.
- In a small bowl, whisk together lime juice, fish sauce, sugar, and sliced red chili (if using). Pour the dressing over the salad mixture and toss gently to combine.
- Serve the salad on a platter or individual bowls, garnished with crushed roasted peanuts on top and additional herbs if desired.
