Ingredients
- Shrimp - 200 grams, peeled and deveined
- Squid - 150 grams, cleaned and sliced into rings
- Rice vermicelli noodles - 50 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Fresh mint leaves - 20 grams, chopped
- Cilantro - 20 grams, chopped
- Lime - 1, juiced
- Fish sauce - 2 tablespoons
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, finely chopped (optional)
- Peanuts - 30 grams, crushed (for garnish)
Steps
- Bring a pot of water to a boil. Add the rice vermicelli noodles and cook for 3-4 minutes until soft. Drain and rinse under cold water. Set aside.
- In the same pot, bring water back to a boil and add the shrimp. Cook for 2-3 minutes until they turn pink. Using a slotted spoon, remove the shrimp and set aside.
- Add the squid rings to the boiling water and cook for 2-3 minutes until they are opaque and tender. Drain and set aside with the shrimp.
- In a large bowl, combine the cooked shrimp, squid, rice vermicelli, cucumber, carrot, red bell pepper, mint, and cilantro. Toss gently to mix the ingredients.
- In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chopped chili pepper (if using) to create the dressing.
- Pour the dressing over the salad and toss well to ensure everything is coated evenly.
- Serve the salad in bowls, garnished with crushed peanuts on top.
