Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Squid - 150 grams, cleaned and sliced into rings
  • Rice vermicelli noodles - 50 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Fresh mint leaves - 20 grams, chopped
  • Cilantro - 20 grams, chopped
  • Lime - 1, juiced
  • Fish sauce - 2 tablespoons
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely chopped (optional)
  • Peanuts - 30 grams, crushed (for garnish)

Steps

  1. Bring a pot of water to a boil. Add the rice vermicelli noodles and cook for 3-4 minutes until soft. Drain and rinse under cold water. Set aside.
  2. In the same pot, bring water back to a boil and add the shrimp. Cook for 2-3 minutes until they turn pink. Using a slotted spoon, remove the shrimp and set aside.
  3. Add the squid rings to the boiling water and cook for 2-3 minutes until they are opaque and tender. Drain and set aside with the shrimp.
  4. In a large bowl, combine the cooked shrimp, squid, rice vermicelli, cucumber, carrot, red bell pepper, mint, and cilantro. Toss gently to mix the ingredients.
  5. In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chopped chili pepper (if using) to create the dressing.
  6. Pour the dressing over the salad and toss well to ensure everything is coated evenly.
  7. Serve the salad in bowls, garnished with crushed peanuts on top.
