- Fresh cilantro - 30 grams, chopped
- Fresh mint - 30 grams, chopped
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Sugar - 5 grams
- Garlic - 1 clove, minced
- Chili pepper - 1 small, thinly sliced (optional)
- Peanuts - 30 grams, crushed (for garnish)
Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked lobster meat, julienned carrot, cucumber, and red bell pepper.
- Add the chilled rice vermicelli noodles to the bowl with the vegetables and lobster.
- In a separate small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper (if using) until the sugar is dissolved.
- Pour the dressing over the lobster and vegetable mixture, and toss gently to combine.
- Add the chopped cilantro and mint, then toss again to distribute the herbs evenly.
