Ingredients

  • Lobster meat - 200 grams, cooked and chopped
  • Rice vermicelli noodles - 100 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 30 grams, chopped
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sugar - 5 grams
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, thinly sliced (optional)
  • Peanuts - 30 grams, crushed (for garnish)

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cooked lobster meat, julienned carrot, cucumber, and red bell pepper.
  3. Add the chilled rice vermicelli noodles to the bowl with the vegetables and lobster.
  4. In a separate small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper (if using) until the sugar is dissolved.
  5. Pour the dressing over the lobster and vegetable mixture, and toss gently to combine.
  6. Add the chopped cilantro and mint, then toss again to distribute the herbs evenly.
  7. Serve the salad in bowls, garnished with crushed peanuts on top.
