Ingredients

  • Cucumber (Dưa Leo) - 1 medium
  • Fresh mint leaves - 10 grams
  • Fresh coriander (cilantro) - 10 grams
  • Rice vinegar - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Red chili (sliced) - 1 small
  • Garlic (minced) - 1 clove
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot of boiling water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and cool them under cold water, then set aside.
  2. While the shrimp cools, thinly slice the cucumber into matchsticks or ribbons and place them in a mixing bowl.
  3. In a small bowl, whisk together rice vinegar, fish sauce, lime juice, sugar, minced garlic, sliced red chili, salt, and black pepper to make the dressing.
  4. Add the cooled shrimp to the cucumber in the mixing bowl, then pour the dressing over the mixture and toss gently to combine.
  5. Tear the mint and coriander leaves and add them to the bowl, tossing again to distribute the herbs evenly.
  6. Taste and adjust seasoning if necessary, then serve immediately on a plate, garnished with extra herbs if desired.
