- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Red chili (sliced) - 1 small
- Garlic (minced) - 1 clove
- Salt - to taste

Steps
- In a pot of boiling water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and cool them under cold water, then set aside.
- While the shrimp cools, thinly slice the cucumber into matchsticks or ribbons and place them in a mixing bowl.
- In a small bowl, whisk together rice vinegar, fish sauce, lime juice, sugar, minced garlic, sliced red chili, salt, and black pepper to make the dressing.
- Add the cooled shrimp to the cucumber in the mixing bowl, then pour the dressing over the mixture and toss gently to combine.
- Tear the mint and coriander leaves and add them to the bowl, tossing again to distribute the herbs evenly.
