Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Green papaya (shredded) - 150 grams
  • Carrot (shredded) - 50 grams
  • Cucumber (thinly sliced) - 100 grams
  • Fresh mint leaves - 20 grams
  • Fresh cilantro - 20 grams
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sugar - 5 grams
  • Chili (sliced) - 1 small
  • Roasted peanuts (crushed) - 30 grams
  • Sesame oil - 5 ml

Steps

  1. In a pot, bring water to a boil and add the shrimp. Cook for 2-3 minutes or until they turn pink. Drain and let cool.
  2. In a large bowl, combine the shredded green papaya, shredded carrot, and sliced cucumber.
  3. In a small bowl, whisk together lime juice, fish sauce, sugar, and sesame oil until the sugar dissolves.
  4. Add the cooked shrimp to the bowl of vegetables and pour the dressing over the top. Toss gently to combine.
  5. Add fresh mint, cilantro, and sliced chili to the salad. Toss again to distribute the herbs evenly.
  6. Serve the salad in bowls, topped with crushed roasted peanuts.
