Ingredients
- Shrimp (peeled and deveined) - 200 grams
- Green papaya (shredded) - 150 grams
- Carrot (shredded) - 50 grams
- Cucumber (thinly sliced) - 100 grams
- Fresh mint leaves - 20 grams
- Fresh cilantro - 20 grams
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Sugar - 5 grams
- Chili (sliced) - 1 small
- Roasted peanuts (crushed) - 30 grams
- Sesame oil - 5 ml
Steps
- In a pot, bring water to a boil and add the shrimp. Cook for 2-3 minutes or until they turn pink. Drain and let cool.
- In a large bowl, combine the shredded green papaya, shredded carrot, and sliced cucumber.
- In a small bowl, whisk together lime juice, fish sauce, sugar, and sesame oil until the sugar dissolves.
- Add the cooked shrimp to the bowl of vegetables and pour the dressing over the top. Toss gently to combine.
- Add fresh mint, cilantro, and sliced chili to the salad. Toss again to distribute the herbs evenly.
- Serve the salad in bowls, topped with crushed roasted peanuts.
