Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Rice vermicelli noodles - 100 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 small, julienned
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 30 grams, chopped
  • Lime juice - 30 ml
  • Fish sauce (kosher) - 15 ml
  • Sugar - 10 grams
  • Chili pepper - 1 small, thinly sliced
  • Peanuts - 30 grams, crushed
  • Salt - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the rice vermicelli noodles according to package instructions, usually about 3-5 minutes. Drain and rinse under cold water to stop the cooking process, then set aside.
  2. In a medium pot, bring water to a boil and add the shrimp. Cook for about 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water, then chop into smaller pieces if desired.
  3. In a large mixing bowl, combine the cooked noodles, shrimp, cucumber, carrot, red bell pepper, cilantro, and mint.
  4. In a small bowl, whisk together lime juice, fish sauce, sugar, and sliced chili pepper until the sugar dissolves.
  5. Pour the dressing over the salad mixture and toss gently to combine. Season with salt to taste.
  6. Divide the salad into two serving plates and sprinkle crushed peanuts on top before serving.
