Ingredients
- Shrimp (peeled and deveined) - 200 grams
- Tapioca flour - 100 grams
- Water - 150 ml
- Garlic (minced) - 1 clove
- Shallots (sliced) - 1 small
- Lettuce leaves - 4 leaves
- Cilantro (fresh) - 10 grams
- Mint leaves - 10 grams
- Lime (juiced) - 1
- Fish sauce - 2 tablespoons
- Sugar - 1 teaspoon
- Chili (sliced) - 1 (optional)
Steps
- In a bowl, combine shrimp with minced garlic, salt, and pepper. Let marinate for 10 minutes.
- In a separate bowl, mix the tapioca flour and water until smooth. Let it sit for 10 minutes.
- Bring a pot of water to a boil. Drop the marinated shrimp into the boiling water and cook for 3-4 minutes until they turn pink. Remove and set aside.
- In a non-stick pan, heat a little oil and sauté the sliced shallots until golden brown.
- Take a small amount of the tapioca mixture and form it into a flat circle in your palm. Place one shrimp in the center and fold the tapioca around it, sealing the edges carefully.
- Repeat with the remaining shrimp and tapioca mixture.
- In the same pot of boiling water, gently cook the dumplings for about 5-7 minutes until they become translucent and float to the surface. Remove and drain.
- Prepare the dipping sauce by mixing lime juice, fish sauce, sugar, and sliced chili in a small bowl.
- To serve, place the lettuce leaves on a plate, top with the cooked dumplings, and garnish with fresh cilantro and mint. Serve with the dipping sauce on the side.
