Steps
- In a pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and cool under cold running water.
- In a large bowl, combine the pomelo segments, julienned carrot, sliced cucumber, mint leaves, cilantro, and red onion.
- In a small bowl, whisk together lime juice, fish sauce, and sugar until the sugar dissolves.
- Add the cooked shrimp to the bowl with the pomelo and vegetables, then drizzle the dressing over the top.
- Toss everything gently to combine, ensuring the shrimp and vegetables are well coated with the dressing.
