  • Red bell pepper - 50 grams, thinly sliced
  • Fresh herbs (mint, cilantro) - 30 grams, chopped
  • Roasted peanuts - 30 grams, crushed
  • Lime juice - 2 tablespoons
  • Sugar - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)
  • Garlic - 1 clove, minced

Steps

  1. Rinse the konjac jelly under cold water and cut it into thin strips.
  2. In a large mixing bowl, combine the konjac jelly, julienned carrots, cucumber, red bell pepper, and chopped herbs.
  3. In a small bowl, whisk together lime juice, sugar, soy sauce, garlic, and chili sauce (if using) until the sugar dissolves.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients thoroughly.
  5. Let the salad sit for about 5 minutes to allow the flavors to meld.
