Steps
- Soak the reconstituted jellyfish in cold water for about 10 minutes to soften, then drain and pat dry.
- In a large bowl, combine the julienned carrot, cucumber, and red bell pepper.
- Add the jellyfish to the bowl with the vegetables.
- In a separate small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chili until the sugar dissolves.
- Pour the dressing over the salad mixture and toss gently to combine.
- Add the chopped mint and cilantro, and toss again to incorporate.
- Taste and adjust seasoning if necessary, adding more lime juice or fish sauce to your preference.
- Let the salad sit for about 10 minutes for the flavors to meld.
