  • Lime juice - 30 ml
  • Fish sauce (kosher) - 15 ml
  • Sugar - 10 grams
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, sliced (adjust to taste)
  • Peanuts - 30 grams, crushed (for topping)

Steps

  1. Soak the reconstituted jellyfish in cold water for about 10 minutes to soften, then drain and pat dry.
  2. In a large bowl, combine the julienned carrot, cucumber, and red bell pepper.
  3. Add the jellyfish to the bowl with the vegetables.
  4. In a separate small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced chili until the sugar dissolves.
  5. Pour the dressing over the salad mixture and toss gently to combine.
  6. Add the chopped mint and cilantro, and toss again to incorporate.
  7. Taste and adjust seasoning if necessary, adding more lime juice or fish sauce to your preference.
  8. Let the salad sit for about 10 minutes for the flavors to meld.
