Steps
- Soak the dried jellyfish in cold water for about 20 minutes until it expands and softens. Drain and rinse under cold water.
- In a bowl, combine the soaked jellyfish, julienned cucumber, julienned carrot, chopped cilantro, chopped mint, minced garlic, and sliced chili.
- In a separate small bowl, mix the fish sauce, lime juice, erythritol (if using), salt, and black pepper to create the dressing.
