Ingredients

  • Garlic - 1 clove, minced
  • Chili - 1 small, thinly sliced
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Erythritol - 1 teaspoon (optional, for sweetness)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried jellyfish in cold water for about 20 minutes until it expands and softens. Drain and rinse under cold water.
  2. In a bowl, combine the soaked jellyfish, julienned cucumber, julienned carrot, chopped cilantro, chopped mint, minced garlic, and sliced chili.
  3. In a separate small bowl, mix the fish sauce, lime juice, erythritol (if using), salt, and black pepper to create the dressing.
  4. Pour the dressing over the jellyfish and vegetable mixture and toss well to combine.
