Ingredients

  • Water spinach (rau muống) - 200 grams
  • Carrot - 50 grams, julienned
  • Red bell pepper - 50 grams, thinly sliced
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, sliced (optional)
  • Roasted peanuts - 20 grams, crushed

Steps

  1. Bring a pot of water to a boil. Add the water spinach and blanch for about 1-2 minutes until bright green. Remove and immediately transfer to an ice bath to stop the cooking process, then drain well.
  2. In a large bowl, combine lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper (if using). Mix well until sugar is dissolved.
  3. Add the blanched water spinach, julienned carrot, sliced red bell pepper, chopped mint, and cilantro to the bowl. Toss everything together gently to coat the vegetables with the dressing.
  4. Transfer the salad to a serving plate and sprinkle crushed roasted peanuts on top before serving.
