Ingredients
- Water spinach (rau muống) - 200 grams
- Carrot - 50 grams, julienned
- Red bell pepper - 50 grams, thinly sliced
- Fresh mint leaves - 10 grams, chopped
- Fresh cilantro - 10 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, sliced (optional)
- Roasted peanuts - 20 grams, crushed
Steps
- Bring a pot of water to a boil. Add the water spinach and blanch for about 1-2 minutes until bright green. Remove and immediately transfer to an ice bath to stop the cooking process, then drain well.
- In a large bowl, combine lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper (if using). Mix well until sugar is dissolved.
- Add the blanched water spinach, julienned carrot, sliced red bell pepper, chopped mint, and cilantro to the bowl. Toss everything together gently to coat the vegetables with the dressing.
- Transfer the salad to a serving plate and sprinkle crushed roasted peanuts on top before serving.
