Ingredients

  • Lotus stems - 200 grams, julienned
  • Shrimp - 150 grams, peeled and deveined
  • Pork tenderloin - 100 grams, cooked and thinly sliced
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Fresh mint leaves - 20 grams, chopped
  • Fresh coriander - 20 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Chili - 1 small, finely chopped
  • Peanuts - 30 grams, crushed
  • Sesame oil - 1 teaspoon

Steps

  1. In a pot of boiling water, blanch the julienned lotus stems for 2-3 minutes until tender yet crispy. Drain and rinse under cold water to stop the cooking process.
  2. In the same pot, add the shrimp and cook for 3-4 minutes until they turn pink and opaque. Drain and let cool before slicing them in half.
  3. In a bowl, combine the cooked and sliced pork, shrimp, lotus stems, carrot, cucumber, mint, and coriander.
  4. In a separate small bowl, whisk together lime juice, fish sauce, sugar, and chili until the sugar dissolves.
  5. Pour the dressing over the salad mixture and toss gently to combine all the ingredients well.
  6. Drizzle with sesame oil and sprinkle crushed peanuts on top before serving.
