Ingredients
- Lotus stems - 200 grams, julienned
- Shrimp - 150 grams, peeled and deveined
- Pork tenderloin - 100 grams, cooked and thinly sliced
- Carrot - 50 grams, julienned
- Cucumber - 50 grams, julienned
- Fresh mint leaves - 20 grams, chopped
- Fresh coriander - 20 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Chili - 1 small, finely chopped
- Peanuts - 30 grams, crushed
- Sesame oil - 1 teaspoon
Steps
- In a pot of boiling water, blanch the julienned lotus stems for 2-3 minutes until tender yet crispy. Drain and rinse under cold water to stop the cooking process.
- In the same pot, add the shrimp and cook for 3-4 minutes until they turn pink and opaque. Drain and let cool before slicing them in half.
- In a bowl, combine the cooked and sliced pork, shrimp, lotus stems, carrot, cucumber, mint, and coriander.
- In a separate small bowl, whisk together lime juice, fish sauce, sugar, and chili until the sugar dissolves.
- Pour the dressing over the salad mixture and toss gently to combine all the ingredients well.
- Drizzle with sesame oil and sprinkle crushed peanuts on top before serving.
