Ingredients

  • Lotus stems - 200 grams, sliced thinly
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Fresh mint leaves - 10 grams, chopped
  • Fresh coriander leaves - 10 grams, chopped
  • Roasted peanuts - 30 grams, crushed
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Agave syrup - 1 teaspoon
  • Chili pepper - 1 small, finely chopped (adjust to taste)
  • Sesame oil - 1 teaspoon

Steps

  1. In a bowl, soak the sliced lotus stems in cold water with a little lime juice for about 10 minutes to keep them crisp.
  2. While the lotus stems are soaking, prepare the vegetables: julienne the carrot, cucumber, and red bell pepper.
  3. In a large mixing bowl, combine the soaked lotus stems, julienned vegetables, chopped mint, and coriander.
  4. In a separate small bowl, whisk together the lime juice, soy sauce, agave syrup, chili pepper, and sesame oil to create the dressing.
  5. Pour the dressing over the salad mixture and toss gently to combine, ensuring everything is well coated.
  6. Serve the salad topped with crushed roasted peanuts for added crunch.
