Ingredients
- Shrimp - 150 grams, peeled and deveined
- Squid - 100 grams, cleaned and sliced
- Rice vermicelli noodles - 80 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Fresh mint leaves - 20 grams, chopped
- Fresh coriander (cilantro) - 20 grams, chopped
- Lime - 1, juiced
- Fish sauce - 2 tablespoons
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Bird's eye chili - 1, finely chopped (optional)
- Roasted peanuts - 30 grams, crushed (for garnish)
Steps
- In a pot of boiling water, cook the rice vermicelli noodles according to package instructions until soft, then drain and rinse with cold water.
- In a saucepan, bring water to a boil and add the shrimp and squid. Cook for 2-3 minutes or until the shrimp turn pink and the squid is opaque. Drain and cool.
- In a large bowl, combine the cooked shrimp, squid, rice vermicelli, cucumber, carrot, mint, and coriander.
- In a small bowl, mix lime juice, fish sauce, sugar, minced garlic, and bird's eye chili (if using) to create the dressing.
- Pour the dressing over the seafood and vegetable mixture, gently tossing everything together to combine.
- Serve the salad in bowls, garnished with crushed roasted peanuts on top.
