Ingredients

  • Shrimp - 150 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Rice vermicelli noodles - 80 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Fresh mint leaves - 20 grams, chopped
  • Fresh coriander (cilantro) - 20 grams, chopped
  • Lime - 1, juiced
  • Fish sauce - 2 tablespoons
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Bird's eye chili - 1, finely chopped (optional)
  • Roasted peanuts - 30 grams, crushed (for garnish)

Steps

  1. In a pot of boiling water, cook the rice vermicelli noodles according to package instructions until soft, then drain and rinse with cold water.
  2. In a saucepan, bring water to a boil and add the shrimp and squid. Cook for 2-3 minutes or until the shrimp turn pink and the squid is opaque. Drain and cool.
  3. In a large bowl, combine the cooked shrimp, squid, rice vermicelli, cucumber, carrot, mint, and coriander.
  4. In a small bowl, mix lime juice, fish sauce, sugar, minced garlic, and bird's eye chili (if using) to create the dressing.
  5. Pour the dressing over the seafood and vegetable mixture, gently tossing everything together to combine.
  6. Serve the salad in bowls, garnished with crushed roasted peanuts on top.
