- Sugar - 1 teaspoon (5 grams)
- Garlic - 1 clove, minced
- Chili pepper - 1 small, sliced
- Peanuts - 30 grams, crushed
- Sesame oil - 1 teaspoon (5 ml)
Steps
- 1. Bring a pot of water to a boil and cook the pork tenderloin for about 15-20 minutes until fully cooked. Remove from water and let it cool.
- 2. While the pork cools, julienne the carrot, cucumber, and red bell pepper into thin strips.
- 3. In a small bowl, mix lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper to create the dressing.
- 4. Once the pork has cooled, slice it thinly against the grain.
- 5. In a large bowl, combine the vegetables, sliced pork, chopped cilantro, and mint.
- 6. Drizzle the dressing over the salad and toss gently to combine.
- 7. Serve topped with crushed peanuts and a drizzle of sesame oil.
