  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Fresh mint leaves - 20 grams
  • Fresh cilantro - 20 grams
  • Lime - 1, juiced
  • Fish sauce - 2 tablespoons
  • Sugar - 1 tablespoon
  • Chili pepper - 1 small, finely sliced
  • Peanuts - 30 grams, crushed
  • Sesame oil - 1 tablespoon

Steps

  1. Cook rice vermicelli according to the package instructions, then drain and rinse with cold water. Set aside.
  2. While the vermicelli is cooking, chop the firm tofu into small cubes and pan-fry in a non-stick skillet with sesame oil over medium heat until golden brown, about 5-7 minutes.
  3. In a large bowl, combine the julienned carrot, cucumber, and red bell pepper.
  4. Add the cooked shrimp and fried tofu to the bowl with the vegetables.
  5. In a small bowl, whisk together the lime juice, fish sauce, sugar, and sliced chili pepper until the sugar dissolves.
  6. Pour the dressing over the salad mixture and toss gently to combine all ingredients.
  7. Garnish the salad with fresh mint, cilantro, and crushed peanuts.
