  • Fresh cilantro - 10 grams, chopped
  • Peanuts - 30 grams, crushed
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Chili pepper - 1 small, finely chopped
  • Garlic - 1 clove, minced

Steps

  1. Start by soaking the rice noodles in hot water for about 10 minutes until soft, then drain and set aside.
  2. In a small bowl, mix lime juice, fish sauce, sugar, chili pepper, and minced garlic to create the dressing.
  3. Rinse the scallops under cold water and pat them dry. Heat a non-stick skillet over medium-high heat and sear the scallops for 1-2 minutes on each side until they are opaque and cooked through. Remove from heat and let cool slightly.
  4. In a large mixing bowl, combine the soaked rice noodles, cucumber, carrot, red bell pepper, mint, and cilantro.
