Steps

  1. Begin by cleaning the straw mushrooms thoroughly and slicing them into halves if they are large.
  2. Blanch the mushrooms in boiling water for 2-3 minutes, then drain and set aside to cool.
  3. In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, and cooled straw mushrooms.
  4. In a separate small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sesame oil until the sugar dissolves.
  5. Pour the dressing over the vegetable and mushroom mixture, tossing gently to combine.
  6. Add chopped cilantro and crushed roasted peanuts to the salad, mixing lightly.
