- Peanuts - 20 grams (2 tablespoons, crushed)
Steps
- Wash and thinly slice the cucumber, carrot, and red bell pepper into matchsticks.
- In a large bowl, combine the sliced cucumber, carrot, and red bell pepper.
- Chop the fresh mint and cilantro, then add them to the bowl with the vegetables.
- In a small bowl, whisk together the rice vinegar, fish sauce, sugar, and finely chopped chili pepper (if using).
- Pour the dressing over the salad mixture and toss well to combine.
- Let the salad sit for about 5 minutes to allow the flavors to meld together.
- Serve the salad in bowls, topped with crushed peanuts for added crunch.
