  • Fish sauce - 15 ml (1 tablespoon)
  • Sugar - 5 grams (1 teaspoon)
  • Chili pepper - 1 small (optional, for heat)
  • Peanuts - 20 grams (2 tablespoons, crushed)

Steps

  1. Wash and thinly slice the cucumber, carrot, and red bell pepper into matchsticks.
  2. In a large bowl, combine the sliced cucumber, carrot, and red bell pepper.
  3. Chop the fresh mint and cilantro, then add them to the bowl with the vegetables.
  4. In a small bowl, whisk together the rice vinegar, fish sauce, sugar, and finely chopped chili pepper (if using).
  5. Pour the dressing over the salad mixture and toss well to combine.
  6. Let the salad sit for about 5 minutes to allow the flavors to meld together.
