- Fresh cilantro - 20 grams, roughly chopped
- Lime juice - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Roasted peanuts - 30 grams, crushed
Steps
- If using fresh bamboo shoots, peel and slice them thinly; if using canned, drain and rinse them.
- In a bowl, combine the bamboo shoots, julienned carrot, julienned cucumber, chopped mint, and cilantro.
- In a separate small bowl, whisk together lime juice, rice vinegar, sugar, salt, and black pepper until the sugar is dissolved.
- Pour the dressing over the salad mixture and toss gently to combine.
- Let the salad marinate for about 10 minutes to allow the flavors to meld.
- Serve the salad topped with crushed roasted peanuts for added crunch.
