Ingredients

  • Bamboo shoots (fresh or canned) - 200 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Fresh mint leaves - 20 grams, roughly chopped
  • Fresh cilantro - 20 grams, roughly chopped
  • Lime juice - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Roasted peanuts - 30 grams, crushed

Steps

  1. If using fresh bamboo shoots, peel and slice them thinly; if using canned, drain and rinse them.
  2. In a bowl, combine the bamboo shoots, julienned carrot, julienned cucumber, chopped mint, and cilantro.
  3. In a separate small bowl, whisk together lime juice, rice vinegar, sugar, salt, and black pepper until the sugar is dissolved.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Let the salad marinate for about 10 minutes to allow the flavors to meld.
  6. Serve the salad topped with crushed roasted peanuts for added crunch.
